Swedish Meatballs

Goodness gracious great balls of meat! This recipe makes around 80ish meatballs. They can be served as an appetizer or with the starch of your choice. I prefer to bake mine because it's easier with less mess. I use a stand-up mixer to mix the meat also for less mess, but you can get down and dirty and use your hands if that's your thing.




Ingredients:


Meatballs

5 slices of soft white bread

1/2 cup milk

1 cup onion finely chopped

2 tbsp Butter

3 lbs. ground meat (I used 2 lbs. beef and 1 lb. turkey). Traditionally pork is part of the mix.

2 eggs

2 tsp salt

1 tsp black pepper

1/2 tsp allspice

1/2 tsp nutmeg


Sauce

drippings from meatballs and butter to equal 1/2 cup

1/2 cup flour

4 cups beef broth

1 cup cream

Salt and pepper to taste


Preheat oven to 425 degrees


Tear bread into pieces and place in a bowl. Add milk and stir to mush, set aside.


Melt butter in a skillet and sauté onions over medium low heat until soft. Cool slightly.


In a stand-up mixing bowl add ground meat, bread mush, onions, eggs, and the spices. Mix together using the paddle or hook attachment until it's just mixed together. Do not over mix. (Tip, check to make sure the seasoning is on point before baking the whole batch by taking a small spoonful of the mixture and cook it in the microwave for 30 seconds).



Using a 1 tbsp scoop, scoop meat and place in mounds on oiled baking sheets. Gently, roll each meat mound into balls. To prevent tough balls, do not man-handle the meat, repeat, do not man-handle the meat!


Bake for 10 to 12 minutes.


Place cooked meatballs in a crockpot. Using a rubber spatula, scrape contents of pan and gently pour through a strainer. Add enough butter to equal 1/2 cup. The grease adds great flavor to the sauce, but you can use straight butter it you prefer.


Over medium heat, melt the butter mixture in a large pot and stir in the flour. Cook for about a minute and slowly pour in the broth. Using a whisk, stir until sauce thickens. Add cream, salt and pepper.


Pour sauce over meatballs and gently stir. Keep on low heat in a crockpot for serving. Enjoy!
