Balsamic Glazed Pork Loin Roast

When organizing a large gathering, the last thing you want is a complex meal plan. This roast is incredibly straightforward. No need for fancy tools or ingredients—just a basic spice rub and a sauce with only three ingredients. However, simple doesn't mean bland. This pork is bursting with flavor, and the preparation and cooking method result in a tender, juicy treat.
Serves 12 to 15

Ingredients
4-to-5-pound Pork Lion
1 tablespoon olive oil
1 1/2 tablespoons salt
2 teaspoons black pepper
1 1/2 teaspoons thyme
1 1/2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
3 tablespoons balsamic glaze
2 tablespoons honey mustard
1/4 cup apricot preserve (cherry works nicely too)
Remove excess fat from the pork roast and cover it with oil. In a small bowl, mix together salt though onion powder. Apply the seasoning mixture evenly over the pork and place it in a 9x13 dish. You can do this the night before and store it in the refrigerator. Before baking, allow the pork to rest at room temperature for 30 to 45 minutes.

Preheat the oven to 375 degrees. Mix together the balsamic glaze, mustard, and preserve. Coat the pork thoroughly with the glaze mixture. Bake the pork until it reaches an internal temperature of 145 degrees, which should take about 45 to 60 minutes. Take it out of the oven and cover it loosely with aluminum foil. Allow it to rest for 15 to 20 minutes. Enjoy!
