Banana Foster Pudding Parfaits

Individual banana pudding parfaits with a New Orleans twist. Your guests will feel as if they're dining in the French Quarter. This recipe is simple to prepare and cost-effective, making it the perfect conclusion to any dinner party.



Ingredients

1 tablespoon water

1/2 teaspoon gelatin

1 cup heavy cream

3 tablespoons sugar

1/2 teaspoon vanilla extract

1 package (5.1 ounces) of family-size instant vanilla pudding mix

2 tablespoons butter

1/4 cup dark brown sugar

3 bananas, diced

2 tablespoons dark rum

1 cup crumbled Nilla Wafer


In a small bowl, sprinkle gelatin over water and let it stand for a minute to let the gelatin bloom. Microwave for about 10 seconds and stir until the gelatin dissolves, then set aside. Pour heavy whipping cream into a medium size bowl and start whipping until it begins to thicken. Add sugar, vanilla, and the gelatin mixture, and blend until stiff peaks form. Refrigerate until ready to use.


Prepare pudding according to directions. Refrigerate until ready to use.


In a medium nonstick skillet, melt butter over medium heat. Add brown sugar and stir until it dissolves, which takes about 3 minutes. Incorporate the diced bananas and cook for roughly 2 minutes. Turn off the heat and pour in the rum. Use a long match to ignite the rum, then turn the heat back on. Shake the skillet until the flames subside. Stir once more and allow it to cool to room temperature.

Place 1 tablespoon of crushed Nilla Wafers into each of the 6 small bowls (1 cup size). Layer the crumbles with 2 tablespoons of banana mixture, followed by 1/2 cup of pudding, and finish with a dollop of whipped cream. Add a sprinkle of additional Nilla Wafer crumbles on top. Enjoy!
