Beef Lo Mein

A family takeout favorite. Tender meat, crisp veggies, and noodles soaking up a savory sauce. It can be prepared quicker than the time it takes for the delivery man to get it to you. Plus, you can customize the ingredients to suit your taste.

Ingredients

1 lb sirloin steak thinly sliced (1/8 inch thick)

1 tbsp plus 1 tsp cornstarch

1 tbsp plus 1/4 cup soy sauce

1/4 cup water

2 tbsp hoisin sauce or oyster sauce

1 tbsp rice wine or apple vinegar

1 tbsp fresh ginger graded

1 clove garlic minced or 1/4 tsp garlic powder

2 tbsp neutral oil

1 tsp sesame oil

1 lb snow peas or broccoli florets

2 green onions thinly sliced

1 lb fresh Udon noodles or cook spaghetti noodles

Place beef in a plastic bag sprinkle in 1 tbsp cornstarch and coat beef. Massage in 1 tbsp of soy sauce. Let it sit out at room temperature as you prep the other components.

In a small bowl combine 1/4 cup soy sauce, 1 tsp cornstarch, water, hoisin, vinegar, ginger, and garlic. Set aside.

Tip 1: Store ginger in the freezer for easier grading.

Tip 2: Place plastic wrap over the smallest option on the grader to prevent grader holes getting clogged. Just pull up the wrap and slide the ginger into bowl.

Prep veggies and have noodles ready.

Heat both oils in a wok or a large skillet at medium high heat. Add meat and cook until browned, about 3 minutes. Move meat aside and add veggies. Cook another 3 to 4 minutes and pour in sauce. After 30 seconds add in noodles. Cook for an additional minute. Garnish with sliced green onions. Enjoy!
