Blueberry Banana Breakfast Ice Cream

The easiest way to get a little one excited about a healthy breakfast? Call it ice cream. This is one of my favorite undercover healthy dishes—sweet, creamy, and secretly good for you. I grab the discounted bananas at the grocery store and freeze them right away so they’re always ready to go. Keep it thick and spoonable like “ice cream,” or add a splash of juice or milk to turn it into a smoothie. Either way, it’s a win.


Serves: 1 big serving or 2 little ones 🍦

Perfect for one very happy “ice cream” eater or two smaller portions.



Ingredients

  • 1 frozen banana

  • 1 cup frozen blueberries

  • 1 cup plain yogurt

  • 1 tablespoon chia seeds or ground flaxseed

  • ½ teaspoon vanilla

  • 1 tablespoon honey or sugar (to taste)


Toppings (optional):

  • Mini chocolate chips

  • Sprinkles

  • Chopped nuts


Instructions


  1. Run the frozen banana under warm water just long enough to loosen the peel. Remove the peel with a paring knife.

  2. Slice the banana into ½-inch pieces and add them to a food processor.

  3. Add the blueberries, yogurt, chia seeds or flaxseed, vanilla, and honey or sugar.

  4. Process until smooth and creamy, scraping down the sides as needed.

  5. Spoon into a bowl or glass and finish with your favorite toppings.


Tips & Variations

  • For a thinner smoothie, add of milk or juice.

  • For extra protein, swap in Greek yogurt.

  • Let kids decorate their own bowls with toppings for extra fun.
