A classic dish found in Irish pubs. This variation features a combination of three types of fish and seafood blended with a luxurious creamy sauce, all topped with mashed potatoes.

You can enjoy this comforting dish any time, not just on Saint Patrick's Day.

Serves 6 to 8

1 1/2 pounds of cod

1 pound of shrimp, peeled and deveined

2 1/2 cups of whole milk

1/2 teaspoon of peppercorns

1 bay leaf

1 leek, quartered length wise and chopped

3 tablespoons of butter

1 teaspoon of celery salt

1 teaspoon of dried dill

Salt and pepper to taste

4 tablespoons of flour

1/3 cup of heavy whipping cream plus 2/3 cup

2/3 cup of frozen peas

1/4 pound of smoked salmon broke into chunks

3 pounds of potatoes, peeled and chopped

6 tablespoons of butter

4 ounces of softened cream cheese

1 tablespoon of everything bagel seasoning

Put cod and shrimp in a large saucepan. Pour in milk, add peppercorns and bay leaf. Cover the pot and let it simmer on medium-low heat until the fish is cooked through. Keep an eye on it to prevent the milk from boiling over—I've had unfortunate experience with that. When the fish is ready, take it out of the milk, flake the cod into small pieces, and set cod and shrimp aside.

Place the chopped leeks in a bowl of water, swirl them around, then use a slotted spoon to scoop them out and lay them on a towel to dry.

Melt butter in a 12-inch ovenproof pan over medium heat. Add leeks and sauté until soft. Stir in the seasoning and then the flour. Pour in the reserved milk through a strainer, discarding the peppercorns and bay leaf. Stir until thickened. Add 1/3 cup cream, frozen peas, cod, shrimp, and salmon. Remove from heat.

Put potatoes in a pot, cover with water, and add 1 tbsp of salt. Boil until the potatoes are fork-tender, then strain. Return potatoes to the pot and mash. Stir in 6 tbsp butter, 2/3 cup heavy cream, cream cheese, and everything bagel seasoning. Add salt and pepper to taste.

Preheat the oven to 425 degrees.

Spread mashed potatoes over the fish mixture. Use a fork to scrape the surface or a knife to make swirls. Bake for 25 minutes. Remove from the oven and let cool for 10 minutes before serving. Enjoy!
