These cupcakes are both disturbing and tasty.
Ingredients
1 chocolate box cake mix
1 can cherry pie filling
Follow the instructions on the box mix to make cupcakes and cool. Make a hole in the top of each cupcake with a melon baller and fill with cherry pie filling.
Sugar Glass
1 cup sugar
1/2 cup corn syrup
1/2 cup water
Line a sheet pan with parchment paper. Add all the ingredients to a saucepan and heat over medium heat. Stir until sugar is dissolved. Insert a candy thermometer and heat to 300 degrees. Pour on sheet pan and cool for about an hour.
Frosting
1 8 oz container of mascarpone or cream cheese
1 cup powder sugar
1 cup heavy cream
1 tsp vanilla
Add cheese and sugar to a mixing bowl and beat until smooth. Add cream and blend until it's light and fluffy. Mix in vanilla just until incorporated.
Frost the cupcake I like to use a piping back with a star tip.
Use a mallet or hammer and crack hardened sugar
Stand the shards of sugar glass on each cupcake
Mix some of the sauce from the cherry pie filling with some corn syrup and drizzle over the top. Enjoy
