Layered Loaded Potato Casserole

Mashed potatoes layered with all your favorite baked potato toppings. This creamy cheesy dish is easy and tastes great. Serves 6 to 8.


Ingredients

8 medium russet potatoes peeled and quartered

1/4 cup butter

1/2 cup heavy cream or milk

Salt and pepper to taste

1 cup sour cream

2 cups shredded cheddar cheese

5 slices of bacon cooked and crumbled

2 tbsp green onions finely sliced


Preheat oven to 375 degrees


Add potatoes to a 4-quart pot and just cover with water. Season water with salt and bring to a boil. Cook until potatoes are fork tender. Strain potatoes and dump back into the pot. Add butter, cream, salt, and pepper. Mash all together.


In a buttered casserole dish add 1/2 of the mashed potato mixture. Spread with1/2 cup of sour cream. Sprinkle cheese over sour cream and then top with 1/2 of crumbled bacon. Add second half of mashed potatoes, top with the rest of the sour cream, cheese, and bacon.


Bake uncovered for 25 minutes. Remove from oven and sprinkle green onions over the top. Enjoy!
