I was asked to make a dessert table for a wedding including 250 plus cake pops. I went from zero experience, to a self proclaimed expert. Here's what I learned. Get ready for all things cake pops.
Tip 1. Do not over bake the cake to keep the crumbs moist.
Tip 2. When the cake comes out of the oven allow for it to cool just enough to handle and trim the sides and bottom. (especially if it a white cake)
Tip 3. Add the cake to a bowl and use a hand mixer to crumble then mix in frosting.
Tip 4. Do not overheat the candy coating.
Tip 5. Add crisco to the coating to thin it out. (If the coating is too thick the balls will be hard to coat and will fall off the stick)
Tip 6. Do not dip frozen balls in melted candy. (this will prevent cracking)
Cake Pop (choose your own flavor adventure)
The following recipes makes approximately 24 cake pops
1 box of cake mix (any flavor) plus noted ingredients
1/4 cup frosting (any flavors)
12 oz candy melts (I used wilton melts)
Crisco shortening
24 cake pop sticks
Bake cake according to mix instructions. When still warm, trim the outside dry golden layer and crumble in a bowl. (I used a hand mixer)
Add frosting mix with mixer and then get your hands in there to mix it in really well. (it will feel like playdough)
Shape into 1" balls (I use a small ice cream scoop. Put in the freezer for 10 minutes.
Melt the candy coating following the instructions on the package. Be sure not to over heat. Remove pops from the freezer. Dip the tips of the sticks in candy coating and insert in the balls of cake. (Push them in deep).
Put the balls in the freezer or refrigerator just until the coating is set. Add 1/2 tsp of crisco at a time to make the coating a syrup consistency. Dip the pops in the coating and shake off the excess. This is the time to add sprinkles. You can set the coated balls on parchment paper or stick them in styrofoam. When coating is set you can store them in a container at room temperature for 5 to 6 days, in the refrigerator for a couple weeks or the freezer for around 2 months. Have fun decorating and displaying these fun treats.
