It’s Grillin’ Time!


This grilled chili lime chicken is packed with bold, zesty flavors. The tangy lime, smoky chili powder, and a touch of heat from serrano peppers create the perfect marinade for juicy boneless, skinless chicken thighs. Quick to cook and full of flavor, the chicken gets a delicious smoky char from the grill, while the lime adds a refreshing balance. Whether served with tortillas, grilled veggies, or a fresh slaw, this dish is sure to be a crowd-pleaser!

Ingredients:

  • 3 pounds boneless, skinless chicken thighs

  • ½ cup fresh lime juice

  • 1 tablespoon minced garlic

  • 1 serrano pepper, finely diced (or substitute with jalapeño for less heat)

  • 2 teaspoons chili powder

  • 1 teaspoon smoked paprika

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • ¼ cup neutral oil (such as canola or vegetable oil)


Instructions:

  1. Marinate the Chicken: Place the chicken in a large resealable bag. In a separate bowl, mix together the remaining ingredients, then pour the marinade over the chicken. Seal the bag and refrigerate for 2 to 3 hours. Tip: Avoid marinating for more than 3 hours, as the lime juice can start to "cook" the chicken and alter its texture.

  2. Grill: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill until fully cooked, reaching an internal temperature of 165°F (74°C).

  3. Serve: Slice and serve with warm tortillas, your favorite hot sauce, grilled green onions, and a sprinkle of fresh cilantro.
