Sunday funday! In honor of the Packers playing the Vikings, I decided to combine two meals that Minnesota is known for into one. Cheese filled meat balls sozzled in a creamy beef sauce and topped with tater tots.
Ingredients
Meatballs
2 lbs. ground beef
2 Tbsp Winchester
2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
18 1/2" cubes of cheddar or Velveeta cheese
Preheat oven to 350 degrees. Mix beef through onion powder in a bowl. Scoop meat onto a cooking sheet using an ice cream scooper. Push a cube of cheese into meatball, forming the meat around it. sprinkle top with Montreal Steak Seasoning. Bake for 25 minutes.
Hot Dish
2 Tbsp butter
1 cup chopped onions
2 Tbsp flour
2 cups beef broth
Salt and pepper to taste
1/2 tsp garlic and onion powder
1/2 cup heavy cream
1 can cut green beans
1 can whole kernel corn
1 bag frozen tater tots
Preheat oven to 400 degrees. melt butter in skillet add onions and sauté until translucent. stir in flour. slowly pour in broth and stir until thickened. Add seasonings and canned veggies. Pour sauce into a 9X13" baking dish. Nestle cooked meatball into sauce and then top with tater tots. Baked for 45 to 50 minutes.
Serve with a green salad topped. Enjoy!
