If you're in the mood for bold Southern comfort food with a touch of spice and plenty of flavor, this Cajun Andouille Sausage & Potato Bake is perfect. Smoky sausage, creamy potatoes, and gooey cheddar cheese are combined beneath a crunchy, seasoned panko crust. It's hearty, rustic, and absolutely irresistible.

Main Casserole
13 oz Andouille sausage, cut into half-moon slices
3 tbsp canola oil
ÂĽ cup all-purpose flour
1 medium onion, sliced into long strips
1 bell pepper (green or red), sliced into 1" long strips
1 stalk celery, diced
3 cloves garlic, diced
2 cups chicken stock
1 cup shredded cheddar cheese
Salt and pepper, to taste
1 tsp Cajun seasoning, or to taste
15 oz frozen shredded potatoes, thawed
Crispy Topping
1 cup panko breadcrumbs
2 tbsp olive oil
½ tsp salt
1 tsp Cajun seasoning

👩‍🍳 Instructions
Preheat the oven to 400°F (200°C).
Render the sausage fat:
Place the sausage in a cold nonstick skillet and set over medium heat.
Cook until the sausage is nicely browned.
Remove the sausage and reserve about 2 tablespoons of rendered fat in the pan.
Build the roux:
Add 2 tablespoons of canola oil and ¼ cup flour to the skillet.
Cook over medium heat, stirring constantly, until the roux turns slightly golden.
Add the vegetables:
Stir in the onion, bell pepper, and celery.
Cook until tender, about 5 minutes.
Add garlic and cook for 30 seconds more.
Make the sauce:
Pour in the chicken stock and increase heat to medium-high.
Simmer for 5–7 minutes, stirring until slightly thickened.
Add cheese, salt, pepper, and Cajun seasoning, stirring until the cheese melts.
Combine everything:
Gently fold in the thawed shredded potatoes and cooked sausage.
Transfer to a baking dish:
Pour the mixture into a 9x13-inch casserole dish (or smooth the top if using an oven-safe skillet).
Make the topping:
In a small bowl, mix panko breadcrumbs, olive oil, salt, and Cajun seasoning.
Sprinkle evenly over the casserole.
Bake:
Bake uncovered for 30 minutes, until golden and bubbly.
Serve and enjoy:
Let rest 5 minutes before serving.
