Prep Time: 10 minutes
Cook Time: 15–20 minutes
Total Time: 25–30 minutes
Servings: 3–6, depending on bread thickness

Ingredients
4 eggs
1½ cups milk
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1–2 tablespoons sugar
6–8 slices Texas toast or 10–12 slices regular sandwich bread
2 cups Fruity Pebbles cereal (optional)
Butter, for cooking
Optional toppings:
Maple syrup
Powdered sugar
Fresh strawberries, blueberries, or bananas
Whipped cream
Extra Fruity Pebbles for a little crunch
Instructions
Whip up the good stuff. In a shallow bowl, beat the eggs until well combined. Add the milk, vanilla, sugar and flour, whisking until smooth and the flour is fully incorporated. A few tiny lumps won't ruin breakfast, so don't stress.
Get your crunch ready. If you're going the Fruity Pebbles route, pour the cereal onto a separate plate or shallow dish. Spread it into an even layer so it's ready for some serious bread-coating action.
Butter up that skillet. Heat a large skillet or griddle over medium heat. Add enough butter to lightly coat the surface. Once the butter starts bubbling, you're ready to roll.
Give that bread a bath. Dip each slice of bread into the egg mixture, turning to coat both sides. Let the excess drip off. If you're using regular sandwich bread, make it a quick dip so it doesn't turn into a soggy mess.
Make it colorful (optional). For the Fruity Pebbles version, gently press the soaked bread into the cereal, coating both sides. Give it a little pat to help those colorful bits stick.
Get flippin'! Place the bread into the hot skillet and cook for approximately 2–3 minutes per side, until golden brown and cooked through. If you're using Fruity Pebbles, keep the heat closer to medium-low and watch carefully. That sugary cereal can go from beautifully toasted to burnt faster than you can find the TV remote.
Keep the deliciousness coming. Repeat with the remaining bread, adding more butter to the skillet as needed.
Pile it on and dig in. Serve warm with maple syrup, powdered sugar, fresh fruit, whipped cream, or whatever makes your breakfast-loving heart happy.
Put it inside of you and enjoy! 😋
A Few Tips from The Red Sink
Thick or thin? Texas toast gives you a thick, fluffy center with beautifully golden edges. Regular sandwich bread works just as well, but cooks a little faster and makes more slices.
Don't drown the bread. A quick dip is all you need, especially when using thinner bread. You want French toast, not French mush.
Keep that crunch crunchy. When using Fruity Pebbles, don't soak the bread too long, and cook over slightly lower heat to prevent the cereal from burning.
Feeding a crowd? Keep cooked slices warm on a wire rack set over a baking sheet in a 200°F oven while you finish the batch. This helps prevent soggy bottoms.
Mix it up! Make half the batch classic and the other half cereal-coated. It's a fun way to please the traditional breakfast lovers and the big kids who never quite grew up.
