✨ Ingredients

  • 2 teaspoons salt

  • 2 teaspoons pepper

  • 1 teaspoon garlic powder

  • 2 teaspoons oregano

  • 1 teaspoon thyme

  • 1/2 to 1 teaspoon red pepper flakes or cayenne pepper

  • Zest of 1 lemon

  • 8 chicken legs

  • 3 tablespoons olive oil

  1. In a small bowl, mix together the salt, pepper, garlic powder, oregano, thyme, red pepper flakes (or cayenne), and lemon zest.

  2. Add the chicken legs to a large bowl or zip‑top bag, sprinkle the spice mixture over them, and toss to coat evenly.

  3. Cover and refrigerate overnight to let the flavors fully soak in.

  4. When ready to cook, preheat your oven to 425°F.

  5. Coat the chicken with olive oil, then arrange the legs on a baking sheet fitted with a wire rack for maximum crispiness.

  6. Roast for 45–50 minutes, turning once, until the chicken reaches an internal temperature of 175°F and the skin is golden and crisp.
