Crepes with Protein‑Packed Filling & Berry Topping

These crepes may look like they’re here for pure indulgence, but don’t be fooled—they’re basically undercover health food wearing a very convincing dessert disguise. One bite in and you’re thinking, “Wow, I’m treating myself,” while the protein-packed filling is quietly high‑fiving your nutritional goals behind the scenes. It’s the kind of recipe that lets you feel smug and satisfied at the same time.

Ingredients


Crepes

  • 4 eggs, beaten

  • 2 cups milk

  • 3 Tbsp melted butter, cooled

  • 1 Tbsp sugar

  • 1 tsp vanilla

  • 1/2 tsp salt

  • 1 1/2 cups flour


Protein Filling

  • 16 oz cottage cheese

  • 2 oz cream cheese

  • 1/2 cup yogurt

  • 3 Tbsp syrup or preferred sweetener

  • 1/2 tsp vanilla


Berry Topping

  • 2 cups frozen berries, thawed

  • 2 Tbsp sugar


🥣 Instructions

Crepes

  1. Add all crepe ingredients to a blender and blend until smooth.

  2. Refrigerate the batter for 30 minutes.

  3. Heat a lightly greased nonstick skillet over medium heat.

  4. Pour in 1/4 cup of batter and swirl to coat the pan in a thin layer.

  5. Cook until the edges look dry, flip, and cook about 30 seconds more.

  6. Transfer to a plate and repeat with remaining batter.


Filling

  • Combine all filling ingredients in a food processor and blend until smooth and creamy.


Berry Topping

  • Stir together the thawed berries and sugar. Keep chilled until serving.


🍽️ To Serve

Spoon a generous tablespoon of filling down the center of each crepe, roll it up, and top with extra filling, whipped cream, berries, and plenty of that delicious berry juice.
