Who says breakfast can't be fun and nutritious? These hearty waffles are packed with whole grains, flaxseed, and a little extra protein to help get the littles the nutrition they need. Top them with fresh berries and syrup, or build a waffle cabin! Because sometimes playing with your food is the best part of breakfast.

Yield: Approximately 8–10 waffles, depending on your waffle iron.

Serving Size: 2 standard waffles per person.

Servings: Approximately 4–5.

Ingredients

  • 1 cup all-purpose flour

  • 1 cup whole-wheat flour

  • 1/2 cup ground flaxseed

  • 1/3 cup protein powder (I use Simple Truth Protein & Greens, vanilla)

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1/4 cup granulated sugar

  • 2 cups milk

  • 2 large eggs

  • 1/3 cup canola oil

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the waffle iron. Heat your waffle iron according to the manufacturer's instructions. Lightly grease if needed.

  2. Mix the dry ingredients. In a large bowl, whisk together the all-purpose flour, whole-wheat flour, ground flaxseed, protein powder, baking powder, salt, and sugar until evenly combined.

  3. Combine the wet ingredients. In a separate bowl, whisk together the milk, eggs, canola oil, and vanilla extract until smooth.

  4. Make the batter. Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are perfectly fine. Avoid overmixing to keep your waffles light and fluffy. If the batter seems too thick, add a splash of milk.

  5. Cook the waffles. Pour the batter into your preheated waffle iron and cook according to the manufacturer's instructions until golden brown and crisp.

  6. Add the finishing touches. Serve warm with fresh berries, maple syrup, or your favorite toppings.

  7. Make breakfast more fun! My little one loves having her waffles arranged like a tiny cabin, with syrup on the side for dipping. Sometimes playing with your food is half the fun!

Put it inside of you and enjoy!

A little baking tip: The tablespoon of baking powder will help give these waffles a lighter, fluffier texture, especially with the whole-wheat flour, flaxseed, and protein powder, which can make waffles a bit dense.

For The Red Sink, I'd also recommend letting the batter rest for about 5 minutes before cooking. This gives the flaxseed and whole-wheat flour time to absorb some moisture.
