There’s something magical about a skillet dinner that comes together fast but tastes like you spent all afternoon coaxing out flavor. That’s exactly what happens when you toss freeze‑dried tomatoes into this quick and easy Ground Turkey Picadillo. They rehydrate right in the pan, releasing a natural sweetness that balances the savory turkey, spices, and veggies like they were meant to be together. It’s bold, bright, and ridiculously flavorful—proof that weeknight cooking doesn’t have to be boring.

Ingredients


3 medium potatoes, diced into 1/2-inch pieces

1 medium onion, chopped

1 jalapeño, diced

2 cloves of garlic, minced

1 pound ground turkey

Salt and pepper to taste

1 teaspoon ground chipotle chili powder

1 cup freeze-dried tomatoes, chopped into 1/2-inch pieces (or substitute with 1 can of diced tomatoes or 1 cup of fresh tomatoes, using less water)

1 1/2 cups water


Instructions


  1. Heat the oil in a large skillet over medium‑high heat.

  2. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to brown.

  3. Stir in the onions and jalapeño. Cook for about 7 minutes until softened.

  4. Add the garlic and cook for 1–2 minutes until fragrant.

  5. Add the ground beef, breaking it apart as it cooks. Continue until fully browned.

  6. Season with salt, pepper, and chili powder, mixing well.

  7. Add the tomatoes and pour in the water. Stir to combine.

  8. Cover the skillet and cook for 5–7 minutes until the potatoes are tender and flavors meld.


    Serve hot with salsa, sour cream, queso fresco, and warm tortillas.
