I have such fond memories making this foolproof meatloaf with my grandma. I've updated it a bit by sauteing the veggies before adding it to the ground meat. It happens to be one of the first things I learned to make. Nostalgic comfort food at its finest.

Ingredients
2 tbsp oil
1 1/2 cups finely chopped onions
1/2 cup shredded carrots
2 cloves garlic minced
3 oz tomato paste
2 tbsp Worcestershire sauce
2/3 cup water
2 tbsp fresh herbs or 2 tsp dry (I used fresh oregano and fresh thyme)
Salt and pepper to taste
2 lbs. ground meat (I used low fat beef)
2 beaten eggs
1/3 cup milk
1/2 cup dried breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 cup ketchup
Preheat oven to 325 degrees
Heat oil over medium low heat in a saucepan. Add onions and carrot. cook until onions are soft and translucent. Add garlic and cook for 3 more minutes. Stir in tomato paste through salt and pepper. Remove from heat and set aside to cool.

In a large mixing bowl add ground meat through cheese and thoroughly combine. Mix in cooled vegetable mixture. Check to see if needs any additional seasoning by cooking a small chunk in the microwave for 15 seconds.
Line a sheet pan with parchment paper. Shape meat mixture into an oblong shape, or hey, any shape that makes you happy. Spread with ketchup and bake for about 1 hour and 20 minutes. Remove and cool slightly. Enjoy!

I served it with my Layered Loaded potato Casserole and Garlic Green Beans.
